Doce Mezcal is produced in Santiago Matatlán under Maestra Mezcalera, Margarita Blas. The spirit is handcrafted from 8 year, 100% Espadín Capón agaves that have reached peak maturity stage, giving it the maximum amount of flavor.
After harvesting, the quiotes are removed and the agaves are left in the fields for three months to enhance the cultivation process.
The piñas are then roasted for five days using a blend of pine and oak wood and crushed using the traditional tahona method. Fermentation occurs naturally, without the addition of yeast, and the mezcal is double distilled in copper stills. Recycled water filtration from the palenque is used, contributing to a balanced spirit with subtle smoke and heat.Doce Mezcal offers notes of honey and pepper, delivering an earthy, invigorating, and full-bodied spirit with a refined, velvety finish.
